Easiest Dessert Ever

Grandad and Pauline came over for dinner Saturday night and I made my new favorite hosting dessert - ice cream sandwiches!  Seriously, the easiest dessert ever and they taste delicious.

I buy the Pepperidge Farm Double Chocolate Nantucket Dark Chocolate - comes with 8 in a pack, so I can make 4 sandwiches.  We always buy Breyers Natural Vanilla ice cream because it only has 5 ingredients (none of which are high fructose corn syrup!) But you can use whatever cookie/ice cream combo you like.

I let the ice cream set out on the counter for a few minutes to soften.  Then I put a big scoop in between two cookies and press down to make it look more like a sandwich.

Yum!

 Then I wrap each one individually in wax paper and stick them back in the freezer so the ice cream will re-harden.

See, I told you it was easy!
